1 clove garlic
¼ c extra virgin olive oil
1 tsp sea salt
1 tsp cracked black pepper – (freshly ground is best)
Zest or finely grate the outside of the lemon; then squeeze the juice into a jar, make sure there are no seeds! Use a garlic crusher or mince your garlic; it needs to be very fine for this. Add garlic, olive oil, salt and pepper to the jar with the lemon juice and zest – shake until blended. Taste and adjust seasoning, if too strong, add a little more olive oil and shake again.
